Omelet with herbs and smoked salmon

A delicious omelet you can prepare for breakfast or as the first course of a meal.

A delicious omelet you can prepare for breakfast or as the first course of a meal.

Ingredients

5 eggs
1/2 cup milk
1/3 cup fresh basil, finely chopped
1/3 cup dill, finely chopped
1/3 cup parsley, finely chopped
1/2 cup of any hard cheese, grated
5-6 slices of smoked salmon
A few drops of lemon juice
2 tablespoons olive oil
Salt and freshly ground pepper

Preparation method

Step 1

Beat the eggs with the milk, the cheese and the salt. Then add the herbs, putting aside some dill for garnish.

Step 2

In a wide nonstick frying pan, heat the oil over medium heat. Pour the egg mixture and cook the omelette for about five minutes on each side. Remove from the pan and cut into four pieces.

Step 3

Serve the omelet and the salmon slices in alternate layers in a dish, forming a small tower. On each layer, add a few drops of lemon, pepper and dill.
