Aegean-style paella

Ingredients
1-2 fish, whole or sliced (mackerel, tuna, cod or sardines)
Octopus, cuttlefish
7-8 crayfish
7-8 shrimps
A few mussels
2 onions, chopped
3 cups of rice
1 large glass of white wine
1 pinch of saffron
1 tablespoon sweet red pepper
1 cup olive oil
Salt

Preparation method

Step 1

You will need a large skillet. Heat the oil well and then sauté all seafood along with the onions, while stirring constantly. Add the rice and continue sautéing. Stir until all the liquid is absorbed and add the wine. Add the saffron, the red pepper and salt to taste.

Step 2

Stir, reduce heat and add six cups of hot water. Reduce heat again and track the progress, stirring frequently. Let simmer until the rice absorbs all the liquid.
