We can make a sugar-free ice cream with just a few ingredients, primarily using fruits. To sweeten it a bit more, we add 1 tablespoon of honey.
Here are two different recipes:
1. Banana and Cottage Cheese Ice Cream
Ingredients (for 2 servings)
- 1 container of cottage cheese
- 2 ripe bananas
- 1 tablespoon honey
- Cinnamon (optional)
- 12 cherries (diced)
Instructions
- Slice the bananas into small pieces, place them on a parchment-lined baking sheet, and freeze for at least 20 hours.
- Once frozen, transfer the bananas to a blender, add the cottage cheese, honey, and cinnamon. Blend well until the mixture is smooth and creamy.
- Divide the mixture into two bowls and freeze. In 2 hours, you’ll have soft ice cream, and in 4 hours, it will be firmer. Serve with diced cherries for extra flavor!

2. Yogurt and Red Berry Ice Cream
Ingredients (for 2 servings)
- 100 g raspberries

Instructions
- Wash the strawberries and raspberries thoroughly, then freeze them overnight.
- The next day, place the frozen fruit in a blender with the yogurt and blend. You may need to pause and stir occasionally to remove ice cream from the blender walls.
- Blend for 4-5 minutes until the mixture has a smooth texture similar to machine-made ice cream. Transfer to two bowls and enjoy!
