The spicy pico de gallo salsa is very flavorful and perfect for pairing with grilled meat and, of course, tacos. However, it also goes wonderfully with fish or seafood. Especially when served with shrimp, it makes a perfect match.
Ingredients

- 800g shrimp No.3
- 250g medium ripe mango, diced
- 50g dried onion, diced
- 30g jalapeno pepper, finely diced
- 2 tbsp fresh cilantro, finely chopped
- 2 garlic cloves, minced
- 20g ginger, finely chopped
- Juice from 2 limes
- 4 tbsp extra virgin olive oil
- Sea salt, pepper
Procedure
Step 1
In a deep metal bowl, combine the mango, onion, chopped pepper, cilantro, and lime. Season with salt and pepper, and refrigerate.
Step 2
In a pan or on a grill, cook the shrimp for 2 minutes on each side, after marinating them in olive oil, garlic, and ginger for 30 minutes. Serve on a shallow plate or wooden board, and garnish with sprouts of your choice.
