If you’re a feta lover, like us, and you always make sure you have some in your fridge, then you’ll definitely love this quick and easy snack solution we suggest. Not only because it’s super easy to prepare and really tasty, for any time of the day when you want a hearty calcium-filled snack, but also because you can eat it in a new, delicious way!

Another reason to try it? Because feta is a fairly delicate cheese that doesn’t keep in the fridge as long as yellow, hard cheeses, it’s a good idea when it’s about to spoil to indulge in it baked, like in an omelet, in some cheese pie, and in other preparations inspired by the cuisine of the past, where nothing was wasted in tough economic times.

How to make it
It’s as simple as making yellow cheese toast. It’s just that with feta, which is a softer cheese, you have to pay attention to some small details that will make the difference in its success, like the ones below.

Cutting the feta cheese
If you’re going to use the classic toast, it’s a good idea to cut an equally square piece of your favorite white cheese, but a little smaller than the size of the feta of the bread, so that when it’s baked and starts to melt, it doesn’t end up rolling all over the toaster.

Baking
Turn off your toaster as soon as you see that your cheese has started to melt and immediately remove it for serving. Unless you want to create a little crust of melted and baked cheese (as is the case with gouda or edam). Except here, because the cheese is white and delicate, even a minute of extra baking can make your toast overcooked. So we check by opening our toaster oven periodically.

The filling
The basic idea is to toast a toast full of umami flavor with feta cheese, which has that intense aftertaste. Now from there the combinations with other ingredients that can be made are endless. Fresh tomato, cut into thin slices, definitely suits it well, which can be added at the beginning of the baking or afterwards, depending on whether you prefer it roasted or raw. From there, oregano goes well with it, but fresh basil leaves (if we love its strong aroma), even thinly sliced cucumber slices could add their freshness and paste or olive slices.

The bread
As for the bread we choose, that too is up to our personal preferences: from toast, crusted or crustless, white or wholemeal, to pre-baked from our oven, thinly sliced, even Italian ciabatta-style bread goes down well. But it’s just as good made using skewer pies instead of bread. In this case, depending on your appetite and the size of your toaster oven, you’ll either put a skewer pie cut in half and topped and bottomed with feta cheese, or you’ll put a whole pie on the bottom, our cheese in between, and top with a second pie on top. In this case it will take longer for the filling to melt nicely and it will resemble not so much toast as cheese bread.
