Potato and sausage oven omelet

An easy and tasty omelet version

Ingredients

3 potatoes peeled and cut into cubes

1/2 cup of brown oil

1 bunch spring onions

1 sausage into slices

1 bunch parsley (optional)

100g. cheese coarsely

8 eggs

salt and pepper

Preparation method

Step 1

Boil the potatoes in salted water for 10-15 minutes to soften and drain.

Step 2

Preheat the oven to 200ºC. Meanwhile, heat the olive oil in a pan and sauté the onions and slices of sausage for 2 minutes. Add the potatoes to the hot oil as well and stir for 1 minute.

Step 3

Pull the pan from the heat, stir in the parsley. Lay on a baking tray in the oven a rectangular or square piece of greaseproof paper and pour in the batter of the pan.

Step 4

Season to taste and beat the eggs slightly. Pour the crumbs and cheese and stir. Pour the contents of the tray with the egg mixture and gently shake the tray for the omelet to cover it.

Step 5

Bake in the preheated oven for about 25-30 minutes depending on the oven, until golden brown.

Step 6

Take the omelet of the oven and move along with the paper to a plate. Pull the paper, cut into pieces if desired sprinkle with parsley and serve.
