When you combine homemade pizza with special eggs and a delicious sauce, it’s not just fast food or brunch—it’s a hearty and mouthwatering main course.

Ingredients:
For the Pizza and Eggs:
- 125g ready pizza dough mix
- 4 eggs
- 4 slices of prosciutto
- 100g ricotta cheese
- 1 garlic clove, minced
- Zest of 1 lemon
- 50g yellow mozzarella, cut into 3cm pieces
- ½ ball of fresh white mozzarella
- ½ small bunch of basil leaves
- Baby salad leaves, for serving
For the Spicy Hollandaise Sauce:
- 1 egg yolk
- 125g clarified butter* (you’ll need 200g to start)
- 2 tablespoons of your preferred spicy red sauce
Instructions:
Step 1: Prepare the Pizza Dough
Follow the instructions on the pizza dough package. Allow the dough to rise for 1 hour or until it doubles in size.
Step 2: Boil the Eggs
Soft-boil the eggs for 4 minutes in a pot of boiling water. Then, transfer them to a bowl of cold water to cool.
Step 3: Crisp the Prosciutto
Grill or pan-fry two slices of prosciutto for 2 minutes until crispy. Set aside on paper towels to drain.
Step 4: Make the Clarified Butter
Melt 200g of butter slowly in a small pot over very low heat without stirring. Once a foam forms on top, let it settle. After 5 minutes, skim off the remaining foam with a slotted spoon. Strain carefully, leaving behind the milk solids.
Step 5: Prepare the Hollandaise Sauce
Heat a small saucepan with 1/3 of water to a simmer. Reduce heat and place a heatproof bowl over the pan. Add the egg yolk and whisk for 2-3 minutes until it turns pale, thickens, and is pasteurized. Slowly whisk in the clarified butter until the sauce thickens to a mayonnaise consistency. If it’s too thick, add 1 teaspoon of hot water. Stir in the spicy red sauce, season with salt, and keep warm.
Step 6: Preheat the Oven
Preheat the oven grill to the highest setting. Place a medium ovenproof skillet with a detachable handle in the oven to heat up.
Step 7: Prepare the Toppings
In a bowl, mix ricotta cheese, garlic, lemon zest, and a pinch of salt. Roll out the pizza dough to the size of the skillet and transfer it carefully into the skillet. Spread the ricotta mixture on top, leaving a 3cm border. Add the prosciutto and both types of mozzarella.
Step 8: Cook the Pizza
Cook the pizza on the stovetop for 5 minutes, letting the bottom crust turn golden brown. Then, transfer the skillet to the oven and grill for another 5 minutes until the cheese is fully melted and the crust is browned.
Step 9: Add the Eggs
Peel the boiled eggs and distribute them on the pizza. Drizzle half of the hollandaise sauce on top, then grill for an additional 2 minutes.
Step 10: Garnish and Serve
Top with basil leaves and remaining prosciutto. Serve with a side of baby salad leaves and the rest of the hollandaise sauce.
