Deeply tied to Greece’s northern city, a warm bougatsa is the perfect reason for Thessalonians to rise early, even on Sundays or holidays. It’s also the go-to snack after a long night out. Most locals prefer to eat it with a fork, served in portions, and the three most popular varieties remain: cheese, minced meat, and cream.
