A quick, easy pasta that you can bang out in just 20 minutes…

Ingredients
500 gr dried fettuccine pasta
2 garlic cloves, finely chopped
¾ cup extra virgin olive oil
3 large ripe tomatoes, grated
1 tbsp tomato puree
4-5 sun-dried tomatoes, chopped
1 tsp sugar
2 sprigs fresh oregano or 1 tsp dried oregano
200 gr air-dried or beer salami, in cubes
sea salt, black pepper freshly ground
Method
Step 1
Bring a saucepan of salted water to the boil and cook fettuccine al dente. Drain and toss with a tablespoon of olive oil.
Step 2
Meanwhile, pour the oil into a large saucepan over a high heat and sauté the garlic and salami cubes for a minute or two. Stir in the tomatoes, tomato puree, oregano, sugar, season with salt and pepper, reduce heat to medium-low and simmer for 10 minutes or so.
Step 3
Add fettuccine in the saucepan, toss well and serve immediately, sprinkling some dry mature salty cheese on top and freshly ground pepper.
