Here’s what Taste Atlas had to say about kontosouvli:
“Kontosouvli is a traditional Greek dish made from large chunks of pork, marinated in a mix of herbs and spices, then skewered and slowly roasted—similar to gyros or souvlaki. The marinade typically includes garlic, oregano, thyme, rosemary, paprika, olive oil, lemon juice, and red wine. Once marinated, the meat is placed on a large spit and cooked over an open flame, resulting in a rich, flavorful crust and tender, juicy interior. It’s usually sliced thick and served with accompaniments such as pita bread, tzatziki, and traditional Greek salad. Once an Easter specialty, it now features on menus year-round.”
