Greek yogurt mousse with red forest fruit

Fresh yogurt and fruit is a perfect combo

Try this all-star, easy-to-make Greek yogurt mousse with red forest fruit recipe and cool your summer down!

Serves: 4-6 Preparation time: 20m Cooks in: 5m + 2h coolingReady in: 25m

Ingredients

For the mousse:
500g red forest fruit mix
5 sheets of gelatin (10g)
100ml water
5 tbsps granulated sugar
300g Greek yogurt
200ml double cream

For the garnish:
white chocolate flakes
red forest fruits
mint leaves

Method
Step 1
Soak sheets of gelatin in a bowl of cold water for 10 minutes.

Step 2
In a saucepan and over medium heat combine 100ml water with sugar, stirring occasionally, until sugar dissolves. Remove pan from heat.

Step 3
Once soft, lift sheets of gelatin from water. Wring gently to remove excess water, add to warm sugar syrup, stirring until dissolved. Let the mixture cool a little.

Step 4
Puree red forest fruits in a food processor or a blender until smooth. Pour the puree in a bowl, add the lukewarm sugar syrup, yogurt and stir well. Leave it to cool for a while. Then gently stir in double cream with a silicone spoon.

Step 5
Divide mousse among glasses and cover each with plastic wrap; refrigerate at least 1-2 hours before serving.

Step 6
To serve garnish with white chocolate flakes, a few red forest fruits and mint leaves.
