Potato croquettes with oregano

Accompany this delicious appetizer with a green salad. You can also add some cooked chicken or sautéed bacon.

Accompany this delicious appetizer with a green salad. You can also add some cooked chicken or sautéed bacon.

Ingredients

1 ½ kilo potatoes
1 cup feta cheese broken into small chunks
2-3 tablespoons flour
2 eggs
1 small bunch of fresh oregano, finely chopped or 2 teaspoons dried oregano
A pinch of nutmeg
Oil for frying
Salt – pepper

Preparation method

Step 1

Boil the potatoes in their skins in plenty of salted water. Drain and while they are still warm, peel and mash them in a large bowl with a fork.

Step 2

Add to the bowl the remaining ingredients and mix well, preferably with your hands. Put the mixture in the refrigerator for 15 minutes and then shape into croquettes.

Step 3

Heat plenty of olive oil in a saucepan. Once hot, fry the croquettes on both sides until golden. Be careful not to burn them.

Step 4

Drain the croquettes on absorbent paper and serve on a platter.
