Fragrant spices, dates, and sweet pumpkins create a delightful blend of sweet and spicy in these energy bites. The aromas of cinnamon, nutmeg, and cloves evoke something of Christmas, while the pumpkin puts us in the festive spirit of Halloween. This tradition has roots that go deep into time, specifically in the customs of England, Scotland, and Ireland in the 16th century. Nowadays, the tradition celebrated in October—this year on the 31st—is known worldwide. In Anglo-Saxon countries, giant pumpkins become lanterns, and children go door-to-door asking for treats. In the spirit of this tradition, we also become children, flavoring homemade energy balls with pumpkin and plenty of spices, creating a nutritious sweet snack for any time of day.

Ingredients:

  • 1 cup pitted Medjool dates (about 225 grams or 10-12 large dates)
  • 1 cup oats (traditional or quick-cooking, preferably gluten-free)
  • ¼ cup roasted pecans
  • ¼ cup pumpkin puree
  • 1 tablespoon maple syrup or honey or any other sweetener of your choice + 1-3 additional teaspoons (optional, depending on desired sweetness)
  • 1 tablespoon chia seeds or ground flaxseed
  • 1 ¼ teaspoons cinnamon, ½ teaspoon ginger, ¼ teaspoon nutmeg, and ⅛ teaspoon cloves
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions:

  1. For the Dates: If the dates are hard or dry, soak them in warm water for 10 minutes. Drain them well and pat them dry with paper towels. Then, place them in a food processor with a steel blade and blend until chopped into small pieces and forms a sticky mass.
  2. For the Remaining Ingredients: Add the oats, pecans, pumpkin, maple syrup, chia seeds, spices, vanilla extract, and salt. Process again until the ingredients form small pieces, but do not fully puree.
  3. For the Energy Bites: Transfer the mixture to a bowl, cover it, and refrigerate for at least 30 minutes to set.
  4. After removing it from the refrigerator, use a spoon or ice cream scoop to take small amounts and shape them into balls. Place them in an airtight container and keep them in the refrigerator for up to 2 weeks or in the freezer for up to 2 months. You can eat them straight from the freezer or let them sit for a few minutes at room temperature before enjoying them.

If you want to get more into the Halloween spirit, let your imagination run wild and experiment! Dip the balls in melted chocolate and try adding shredded coconut. And if you have a weakness for colorful treats, use food coloring in melted white chocolate, add chocolate sprinkles in various colors, or design playful faces to bring joy to beloved children—and not only—faces.
