Oven baked potato wedges with orange juice

These easy oven baked potato wedges are an ideal side dish to accompany lamb, chicken, rabbit or pork.

These easy oven baked potato wedges are an ideal side dish to accompany lamb, chicken, rabbit or pork. The dish will be much tastier if you use Cyprus potatoes.

Ingredients:

1 kg medium sized potatoes, cut in wedges
1/2 cup olive oil
Juice of 2 oranges
Grated zest of 1 large orange
1 teaspoon coriander seeds, lightly crushed in a mortar
1/2 teaspoon cumin
Salt and pepper

Preparation method:

Step 1
Preheat oven to 180 º C.

Step 2
If you are using non-organic potatoes, peel them and cut them in wedges. If the potatoes are organic, you can bake then in their skin, after you wash them well.

Step 3
Put the potato wedges in an ovenproof dish, add salt and pepper and then the rest of the ingredients. Mix well using you hands.

Step 4
Cover the potato wedges in tin foil and bake for half an hour. Then remove the tin foil and bake for another half hour, turning them at short intervals so that they brown evenly.
