Lentils are a healthy, meaty-tasting Mediterranean dish which cooks far faster than beans. Add celery, red pepper, carrot and spinach if you like for an extra boost of flavor and vitamins!

Ingredients
500 gr lentils, picked and rinsed
1 cup onion, grated
2 garlic cloves, finely sliced
½ cup extra-virgin olive oil
1 large ripe tomato, grated
2 bay leaves
red wine vinegar
salt, freshly ground black pepper
Method
Step 1
Drain and place lentils in a large pan. Cover with water. Boil for 10 minutes and then drain.
Step 2
Return lentils to pan adding six cups of water, onion, garlic, tomato and bay leaves.
Simmer for 30 minutes until tender.
Step 3
Add the oil, salt and pepper and a little vinegar. Simmer for 20-30 minutes until soup thickens.
Step 4
Serve hot in bowls, adding a little extra vinegar and a peppermint sprig if you like.
