Ingredients:
- 700 g chicken fillet
- 3 tablespoons extra virgin olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 tablespoon fresh ginger, grated
- 400 g vegetable broth
- 350 g cream
- 2 spring onions, finely chopped
- Salt and freshly ground pepper
For the Marinade:
- 4 tablespoons garam masala (Indian spice mix)
- 1 teaspoon curry powder
- ½ teaspoon cumin
- ½ teaspoon turmeric
- Basmati rice for serving

Instructions:
Step 1:
Cut the chicken into square pieces. Wash and dry them thoroughly. In a bowl, combine all the marinade ingredients, mix well, and add the chicken pieces. Cover the bowl with plastic wrap and refrigerate for 3 hours.
Step 2:
In a deep pan, heat the olive oil and sauté the onion for 2 minutes over medium to high heat. Add the garlic.
Step 3:
Add the marinated chicken pieces to the pan and sauté on all sides until golden brown. Add the bell peppers, fresh ginger, and deglaze with the broth. Lower the heat, stir in the cream, season with salt and pepper, and cook covered for about 40 minutes, until the meat is tender and the sauce thickens.
Step 4:
Stir well and serve with aromatic basmati rice.
