Hop in the car at first light, and within an hour the Athenian skyline dissolves into a blur of silver-green olive groves and limestone bluffs. By the time your coffee is gone, you’re stepping onto sand the color of ground almonds or polished marble pebbles that clink like ice cubes beneath your toes.
