Cabbage with rice and leeks

Ingredients

1 small cabbage cut into small pieces

2 leeks, coarsely chopped

3-4 sprigs of celery, chopped

1½ cup of rice

1 tablespoon chopped mint (optional)

1 carrot, cut into cubes (optional)

2/3 cup of oil

juice of 1-2 lemons

salt, pepper

Preparation method

Step 1

Pour some olive oil in a saucepan and sauté the leek and the celery for 5 minutes until they soften and, then, add cabbage, carrot, mint, salt and pepper.

Step 2

Add 1½ cup of water, cover the saucepan and simmer for 15 minutes. Check the broth to make sure that it is about 3 cups, and add water if needed.

Step 3

Add the rice, cover the saucepan and simmer for 15 minutes.

Step 4

Add the lemon juice, shake the saucepan and wait about 5 minutes before serving. This meal suits perfect with salted fish, sausage or pastrami.
